Lighter Palak Paneer

Dinner High-protein PCOS-friendly Vegetarian Gluten-free

Ingredients

  • 2 cups spinach (palak), blanched
  • 150 g paneer, cubed
  • 1 onion, chopped
  • 2 tomatoes, pureed
  • 1 tsp ginger-garlic paste
  • 1/2 tsp jeera
  • 1/2 tsp garam masala
  • 1/4 tsp turmeric
  • 1 tsp oil
  • Salt to taste
  • 2 tbsp curd (instead of cream)

Method

  1. Blanch the spinach in hot water for 2 minutes, then blend to a puree.
  2. Heat oil, add jeera, then the onion and ginger-garlic paste; saute till golden.
  3. Add tomato puree, turmeric and salt; cook till the oil separates.
  4. Pour in the spinach puree and simmer for 5 minutes.
  5. Stir in the whisked curd on low heat so it does not split.
  6. Add the paneer cubes and garam masala; simmer 3 more minutes.
  7. Serve hot with roti or brown rice.

Tips & notes

Swap paneer for tofu to make it vegan and lower in fat. Lightly saute the paneer first if you like firmer cubes. Curd replaces cream without losing the creamy texture.
